Sigh. The second most depressing time of the week: Sunday evening. Monday morning being number one of course.
I hope everyone had a lovely weekend to relax and recharge.
Honestly, I can’t wait to get a final good sleep tonight before another busy work week. My Friday night and Sunday afternoon were pretty relaxing, but my Saturday was action-packed. I drove two hours from Halifax to Antigonish to watch my sister play in her Special Olympics provincial soccer games all day and then drove back home in the evening. It wasn’t the nicest day – a high of 12 degrees celsius and rain – but watching my sister and her fellow Special Olympians compete their hearts out and have a blast was totally worth it. It’s pretty inspiring watching Special Olympics because regardless of the results all of the athletes are consistently in good spirits. They’re all just there to compete in a sport that they love, spend time with their teammates and most of all have a fun weekend. It reminds you that sports aren’t always about being the best and winning – they’re supposed to be enjoyed no matter what. Tell me, did you witness anything inspiring this weekend?
This afternoon I made a healthy, gluten free batch of brownies for a small potluck supper with a few of my best friends. I’ve made gluten-free brownies with black beans before, but this time around I also used avocado and I found it really helped add richness to the brownies.

Avocado is so lovely to incorporate in to things because it has a way of adding a creaminess that makes you think you’re eating a rich, (unhealthy) fat-laden recipe. Although avocados are fatty, they are full of monounsaturated (good) fats that we need in our diets regularly.
Now I wasn’t sure if these guys would be sweet enough and I was afraid that they would taste too “black-beany”, but my friends reassured me that they turned out great and that I should share the recipe with all of you on here 🙂 Hooray for encouraging friends!
If you’re in the mood for a rich, chocolatey treat but don’t want to splurge on all your healthy eating I highly recommend you make these. They are certainly satisfying and so rich that you will only need to eat one! Enjoy!
Fudgy Black Bean Avocado Brownies:
1 15 oz. can black beans – 1/2 ripe avocado – 1 egg – 2 egg whites – 1 tsp coconut oil – 2/3 cup unsweetened cocoa/cacao powder – 3/4 tsp stevia – 1/2 cup unsweetened applesauce – 1/4 tsp baking powder – 1/4 tsp baking soda – 1/4 tsp salt – 2 tsp vanilla extract – 1/3 semi-sweet chocolate chips + 2 tbsp for topping
- Preheat oven to 350 and spray an 8×8 baking pan with non-stick spray.
- Place all of the ingredients except for chocolate chips into a blender or food processor and process until everything is well-blended & smooth. The batter should be thick.
- Add 1/3 cup chocolate chips and fold into the batter.
- Pour batter into baking pan and top with 2 tbsp chocolate chips.
- Bake 25 minutes, cool, cut into 12 brownies and eat. 🙂
