Melt in Your Mouth Peanut Butter Cookies

Happy Hump Day!

I hope everyone is having a great week, we’re half way to the weekend! Today was a gloomy old East Coast day, there was plenty of fog to go around. It was a pretty chill day for me as my boyfriend has a “man cold” (http://www.youtube.com/watch?v=0umLwBBypYM) and it was my duty to take care of him of course.

I wasn’t feeling all that energetic myself today but I managed to get my butt to the gym for a quick (and pretty lame) sweat session. But hey, it’s better than no workout at all. This evening I decided that it was once again time to bake a new healthified recipe (this happens often, clearly). I was in the mood for some ooey-gooey cookies and to be honest they turned out even better than I had expected!

This recipe was adapted from Kim Barnouin’s cookbook “Skinny Bitch Bakery”. I did a few swaps to make Kim’s already healthified recipe even MORE healthified! And yes, “healthified” is 100% a word in my books.

Melt in Your Mouth Peanut Butter Cookies:

2 cups whole wheat flour – 1 tsp baking soda – 1/2 tsp baking powder – 1/2 tsp salt – 1/4 cup cornstarch – 1&1/4 cups Earth Balance (vegan butter substitute) – 1 cup light brown sugar – 1/2 tsp stevia – 1/4 cup unsweetened applesauce – 1 cup organic natural peanut butter – 1 tsp vanilla extract

1. Preheat oven to 325. Lightly grease baking sheets & set aside. In a medium bowl, stir together flour, baking soda&powder, salt & cornstarch.

2. In a large bowl, cream together Earth Balance, brown sugar & stevia with an electric mixer. Add peanut butter, vanilla & applesauce to the creamed mixture and beat with mixer until well blended.

3. Add the dry ingredients to the “butter” mixture until everything is mixed together.

4. Roll dough into balls (about 1 tbsp), place on baking sheet and press down lightly with a fork. Bake 10-12 minutes. Cool on a wire rack and then EAT. YUMMMM!
