WIAW: Meatless Monday

Happy Wednesday!! I’m lucky enough to have a university holiday today so I’ve been able to squeeze in some time to share some eats with you guys this week! Today for What I Ate Wednesday I’m sharing what I ate this past Monday.

Ever heard of Meatless Monday? It’s basically a campaign to go vegetarian at least one day a week in an effort to reduce meat consumption for the benefit of your own health + the health of the planet! Now I can’t say that every Monday is a meatless Monday for me, but I can say that at the least one, if not two or three (or more!) days of the week are meatless for me. And that’s really the purpose of the campaign anyways.

You might ask me why I don’t just go vegetarian? Good question. Well, I’ll just say that I do make a conscious effort to eat plant-based (fruits, veggies, nuts, seeds, legumes) the vast majority of the time because I am aware of the benefits this has on my health and the environment. I just don’t feel the need to label it at this point.  If I go out to eat on occasion and want a burger then I’ll get one. Or if my boyfriend is cooking up extra crispy bacon (the best) then I’ll have a piece or two. I know that I am putting in an effort and that’s a lot more than some people can say.

Anyways! Back to what I ate….

Breakfast: For breakfast after a morning gym session I cooked up some oatmeal in the microwave with egg whites and chia seeds for extra fibre and protein. I topped it with banana coins, strawberry slices, almond butter (my obsession) and granola. 

 
Morning Snack: GRAPEFRUIT. Currently loving this fruit – and I am amazed with how much it fills me up!  

 
Lunch: A classic PB& chia jam sandwich on Cinnamon Raisin Ezekiel bread. With a boiled egg on the side for protein. 

 
Afternoon Snack: Sugar snap peas, another favourite. With spicy hummus. Almost too spicy. Definitely needed water on hand.  

 
Supper: On Sunday I prepped brown rice and chickpeas for on-the-go meals for the week. On Mondays I have class until 7pm so I typically eat my supper at school. I packed myself a little rice bowl with chickpeas, cucumber, lettuce, baby carrots, green onion, avocado and sprinkle of hemp hearts. I dressed it with the Orange Maple Miso dressing from the Oh She Glows cookbook. Such a satisfying, plant-based meal!  

 
Dessert: I had one of these little Ice Cream Bites that I made from one of those “Tasty” videos on Facebook! I am obsessed with those videos and these little bites are delish!
