Breakfast Pizza

Try and tell me you know someone who doesn’t love pizza.

Impossible.

There are endless possibilities when it comes to pizza and that’s what makes it amazing. Pepperoni and cheese pizza, BBQ chicken pizza, gourmet pesto veggie pizza, cauliflower or quinoa crust pizza, even vegan pizza. There is a pizza for everyone.

Breakfast pizza?!

Yep.

Now if you’re all too familiar with cold, leftover pizza for breakfast (I know, YUM), this isn’t the same. This is a simple, easy pizza-looking breakfast that you’re gonna love. And all you need is some pita bread.

I’m giving you guys two different variations that you can make but feel free to get creative.

Egg & Avocado Breakfast Pizza:

  • 1 whole wheat pita (GF if desired)
  • 1 egg, sunny-side up
  • 1/2 avocado
  • fresh ground pepper
  • red chilli flakes

Directions:

  1. Set oven to broil.  Spray baking sheet with cooking spray and place pita in the centre.
  2. Place in oven for 3-5 minutes until pita is toasted and browned. Keep an eye on it so it doesn’t burn!
  3. Remove from oven and spread with avocado and your fried egg. Sprinkle pepper and chilli flakes on top. Yum!!

PB Banana Breakfast Pizza:

  • 1 whole wheat pita (GF if desired)
  • 1 tbsp natural peanut butter
  • 1/2 banana
  • drizzle of honey
  • optional: chocolate chips

Directions:

  1. Set oven to broil. Spray baking sheet with cooking spray and place pita with toppings in the centre.
  2. Place in the oven for 3-5 minutes. Be sure to keep an eye on it so it doesn’t burn!!
  3. Remove from oven – pita should be warm and toasted. Enjoy!
